When you’re working with premium beef, you don’t want to mask it — you want to elevate it. Texanz Championship Blend enhances the natural richness of wagyu without overpowering it.

Method

  1. Trim the brisket, leaving a thin fat cap.
  2. Apply Texanz BBQ Championship Blend evenly across the meat.
  3. Smoke at 140–160°C until the rub is set (firmly adhered and not easily scratched off).
  4. Wrap in foil with butter, beef stock, and a small amount of fresh brewed black coffee.
  5. Continue cooking until probe tender (no resistance when inserting a skewer, approximately 95–98°C internal temperature).
  6. Rest in a chilly bin or oven set to low for at least 1–2 hours before slicing.

Result

Buttery, tender brisket with a deep bark and clean, authentic BBQ flavour.
